ABOUT US

Join us at The Institute of Culinary Excellence (ICE) to gain skills and experience in commercial cookery under the expert tuition of our trainers, assessors and guest master chefs. We provide a holistic approach to training and assessment, combining engaging and informative theory lessons with hands on kitchen demonstrations and practice.

ICE students also have the opportunity to visit local food businesses, manufacturers, markets and farms to gain an insight into where our fresh local produce is sourced from. Brisbane offers a warm subtropical climate with a casual relaxed demographic and feel. It also has some excellent award-winning dining establishments. ICE has a wide network of local restaurant and hotel partners who work with us to provide tuition, work placement and sponsorship to the school.

 

WHO IS ICE?

Who is ICE? ICE is a high level, award winning cookery college in Brisbane that offers culinary career training to apprentice and trainee chefs, as well as international students wishing to study cookery in Australia. We employ, and work with, some of the best chefs in the industry. We have world class training kitchens and state of the art classrooms.

OUR PROGRAMS

Our Programs Students attend a combination of theory and practical classes at our Coorparoo campus and combine self-paced project work and home research to complete their qualification. As part of the program, they must also undertake work placement at a local restaurant, hotel or hospitality establishment, which is arranged by ICE.

 

The Institute of Culinary Excellence International Program provides accredited training in the following qualifications:

 

SIT30816 Certificate I II in Commercial Cookery

This program is the traditional trade qualification for chefs, including food safety and hygiene; all practical cookery subjects, menu planning and costing; and diets and nutrition Offered over one year, it includes classroom theory, kitchen practical tuition and work placement.

 

SIT31016 Certificate III in Patisserie

This program is the traditional trade qualification for students wishing to become a pastry chef or pastry or bread specialist. The course includes the basic subjects from the Certificate III Commercial Cookery including: Food hygiene and safety, along with basic cookery methods, but it then branches out into specialised patisserie subjects such as: Pastry, cakes, tortes, yeast based products, petit fours and chocolate confectionery. It also includes preparing espresso coffee and some customer service subjects which could be useful for students who might work in a cafe or patisserie in the future.

 

SIT40516 Certificate IV in Commercial Cookery

This program is similar to the Certificate III in Commercial Cookery program, however it includes more management leadership subjects such as finances and budgets, human resource management and operational planning. Offered over eighteen months, it includes classroom theory, practical kitchen tuition and also work placement.

 

SIT50416 Diploma of Hospitality Management

This program is a senior management qualification, suitable for individuals who are planning on pursuing a career as an executive chef or hospitality manager. It includes business management and leadership subjects as well as commercial cookery electives. Offered over two years it includes classroom theory, self-paced project work, practical kitchen tuition and work placement.

 

 

 

INTERNATIONAL STUDENT FEE SCHEDULE

 

 

 

INTERNATIONAL STUDENT ENROLMENT, FEES & PAYMENT PLAN – 2020

 

  • Submit a student application form and pay the application fee, download the form here or obtain one from our agent.
  • Application reviewed by ICE staff/ video interview conducted.
  • Based on the application and interview outcome the applicant may be offered a place in the course.
    • Enrolment forms are completed and lodged along with Enrolment fee, Equipment and uniform fee and first instalment of the Tuition fee.
  • Once forms, signed written agreement and fees have been received, a Confirmation of Enrolment (CoE) is issued to student.
  • Student finalises VISA application, including health insurance requirements (health insurance must cover the full duration of the course) .
  • Remaining Tuition fee instalments will be invoiced prior to the commencement of each term.

The Institute of Culinary Excellence works with a number of Education Agents for the recruitment of our International Students. As per CRICOS regulations we must have a written agreement with each agent.
